Baked Cod in Coconut Lemon Cream Sauce

  • 1 can coconut milk
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, melt butter over medium heat and sauté the garlic until fragrant.
  3. Add the coconut milk, lemon juice, and lemon zest. Stir and bring to a simmer.
  4. Season the cod fillets with salt and pepper, then place them in a baking dish.
  5. Pour the coconut lemon cream sauce over the cod.
  6. Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Garnish with fresh parsley before serving.
