- 4 cod fillets
- 1 can coconut milk
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons butter
- 1 garlic clove, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a saucepan, melt butter over medium heat and sauté the garlic until fragrant.
- Add the coconut milk, lemon juice, and lemon zest. Stir and bring to a simmer.
- Season the cod fillets with salt and pepper, then place them in a baking dish.
- Pour the coconut lemon cream sauce over the cod.
- Bake for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
Best served with steamed rice or quinoa. Can add vegetables like broccoli or asparagus as a side.
