Baked Cottage Cheese Eggs

  • 4 large Eggs
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Fresh Chives
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika

  • 1 cup Bell Peppers
  • 1 cup Spinach
  • 1/2 cup Sun-Dried Tomatoes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cottage cheese, eggs, and Parmesan cheese. Mix well until smooth.
  3. Stir in the chives, garlic powder, smoked paprika, salt, and pepper.
  4. Add the bell peppers, spinach, and sun-dried tomatoes to the mixture. Mix thoroughly.
  5. Grease a baking dish and pour the mixture into it.
  6. Bake for about 30-35 minutes, or until the eggs are set and the top is slightly golden.
  7. Remove from the oven and let it cool for a few minutes before serving.

Notes

Make sure to drain any excess liquid from the vegetables before mixing to avoid a soggy texture. This dish pairs beautifully with avocado slices or whole grain toast.
