Banana Oatmeal Bars

Ingredients

  • 2 ripe bananas
  • 2 cups rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 cup honey or maple syrup (optional)
  • 1/4 cup chopped nuts or chocolate chips (optional)
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the rolled oats, cinnamon, honey or maple syrup, salt, and vanilla extract to the mashed bananas. Mix until well combined.
  4. If using, fold in chopped nuts or chocolate chips.
  5. Pour the mixture into a greased or lined baking dish and spread it evenly.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Allow to cool before slicing into bars.
  8. Enjoy your bars as a snack or breakfast!

Notes

Store the bars in an airtight container at room temperature for up to three days or in the fridge for up to a week. They can also be frozen for up to three months.
