Banana Oatmeal Muffins

Healthy and delicious Banana Oatmeal Muffins, perfect for breakfast or a snack, using ripe bananas and oats.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/4 cup maple syrup (optional)
  • 1 cup milk (or plant-based milk)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine the mashed bananas, oats, milk, maple syrup, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
  3. Fold in chocolate chips or blueberries if desired.
  4. Spoon the mixture into the muffin tin, filling each cup about 2/3 full.
  5. Bake for 15-20 minutes, or until a toothpick comes out clean.
  6. Allow the muffins to cool before serving.

Notes

For a healthier option, substitute half of the oats with whole wheat flour or add nuts for extra texture.
