- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup maple syrup (optional)
- 1 cup milk (or plant-based milk)
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or blueberries (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, combine the mashed bananas, oats, milk, maple syrup, baking powder, baking soda, cinnamon, and salt. Mix until well combined.
- Fold in chocolate chips or blueberries if desired.
- Spoon the mixture into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool before serving.
Notes
For a healthier option, substitute half of the oats with whole wheat flour or add nuts for extra texture.
