Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook the rice according to the package instructions and set aside.
  2. Cut the chicken into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat, then sauté the chicken for 6-8 minutes until cooked through.
  4. Mix the sauce ingredients in a small bowl: mayonnaise, sriracha, honey, garlic powder, and lime juice.
  5. Add mixed veggies to the skillet with the chicken and cook for 2-3 minutes.
  6. Remove from heat and pour the sauce over the chicken and veggies, stirring to coat.
  7. Serve over a bed of rice and garnish with extra sriracha or green onions if desired.

Notes

Use a meat thermometer to check chicken doneness. Feel free to customize with your favorite veggies.
