Ingredients

- 2 cups cooked shredded chicken
- 1/2 cup barbecue sauce
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped green onions (optional)
- 2 tablespoons olive oil
Instructions
- In a bowl, combine the cooked shredded chicken with barbecue sauce.
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- Place one flour tortilla in the skillet and sprinkle 1/2 cup of shredded cheddar cheese evenly over it.
- Spread 1/2 cup of the BBQ chicken mixture over the cheese and add another 1/2 cup of shredded cheese on top.
- Cover with a second tortilla.
- Cook for about 3-4 minutes until golden brown, then flip and cook the other side for another 3-4 minutes.
- Remove from skillet and repeat with remaining tortillas and filling.
- Slice the quesadillas into wedges and serve warm with your favorite dipping sauces.
Notes
Feel free to use leftover chicken and customize with different cheeses or vegetables.
