- 2 pounds beef chuck, cut into chunks
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup rice
- 2 cups water
Instructions
- In a large pot, brown the beef chunks over medium heat.
- Add the onion and garlic, cooking until softened.
- Stir in the carrots, potatoes, tomato paste, thyme, bay leaf, salt, and pepper.
- Pour in the beef broth and red wine, bringing to a boil.
- Reduce heat to low, cover, and simmer for 2 hours until the beef is tender.
- In a separate pot, cook rice according to package instructions.
- Serve the beef stew over the rice.
Notes
Garnish with fresh parsley or black pepper before serving. Pairs well with crusty bread or a salad.
