Ingredients

  • 2 pounds beef chuck, cut into chunks
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup rice
  • 2 cups water

Instructions

  1. In a large pot, brown the beef chunks over medium heat.
  2. Add the onion and garlic, cooking until softened.
  3. Stir in the carrots, potatoes, tomato paste, thyme, bay leaf, salt, and pepper.
  4. Pour in the beef broth and red wine, bringing to a boil.
  5. Reduce heat to low, cover, and simmer for 2 hours until the beef is tender.
  6. In a separate pot, cook rice according to package instructions.
  7. Serve the beef stew over the rice.

Notes
