- 2 cups broccoli florets
- 8 ounces pasta (rotini or bowtie)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- Blanch the broccoli florets in boiling water for 2 minutes, then transfer to an ice bath.
- In a large bowl, combine the cooked pasta, broccoli, cherry tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Garnish with extra feta or fresh herbs for added flavor.
