Ingredients

  • 2 cups broccoli florets
  • 8 ounces pasta (rotini or bowtie)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. Blanch the broccoli florets in boiling water for 2 minutes, then transfer to an ice bath.
  3. In a large bowl, combine the cooked pasta, broccoli, cherry tomatoes, red onion, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
