- 12 ounces cheese tortellini
- 1/2 cup cherry tomatoes, halved
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup salami, diced
- 1/4 cup fresh basil, chopped
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and let cool.
- In a large bowl, combine the tortellini with cherry tomatoes, bell pepper, red onion, black olives, salami, and basil. Mix well.
- In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
Notes
Serve chilled, garnished with fresh basil and parmesan cheese if desired. Pairs well with grilled chicken or fish.
