- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 cup quick cooking oats
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cream together the softened butter and brown sugar until light and fluffy.
- Mix in the oats, flour, salt, and baking powder until well combined.
- Press half of this mixture into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, whisk together the granulated sugar, eggs, lemon juice, and lemon zest until smooth.
- Pour the lemon filling over the crust in the baking dish.
- Crumble the remaining oat mixture on top of the lemon filling.
- Bake in the preheated oven for 25-30 minutes or until the top is golden.
- Let cool before cutting into bars, and enjoy!
Notes
Dust with powdered sugar for an elegant presentation. Serve with whipped cream or vanilla ice cream if desired.
