Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 cup quick cooking oats
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Mix in the oats, flour, salt, and baking powder until well combined.
  4. Press half of this mixture into the bottom of the prepared baking dish to form the crust.
  5. In a separate bowl, whisk together the granulated sugar, eggs, lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling over the crust in the baking dish.
  7. Crumble the remaining oat mixture on top of the lemon filling.
  8. Bake in the preheated oven for 25-30 minutes or until the top is golden.
  9. Let cool before cutting into bars, and enjoy!

Notes

Dust with powdered sugar for an elegant presentation. Serve with whipped cream or vanilla ice cream if desired.
