Birria Tacos are a delicious and hearty meal made with tender beef and a flavorful sauce from dried chiles and spices, perfect for gatherings.

Ingredients

  • 2 lbs beef chuck or brisket
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 4 cups beef stock
  • Salt, to taste
  • Corn tortillas
  • Oaxacan cheese, shredded
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Toast the guajillo and ancho chiles in a dry skillet until fragrant, then soak them in hot water until soft.
  2. Blend soaked chiles with onion, garlic, cumin, oregano, and a bit of beef stock until smooth.
  3. In a pot, brown the beef on all sides, then add the blended sauce and remaining beef stock.
  4. Braise the beef, covered, on low heat for about 180 minutes, or until tender.
  5. Shred the beef and keep warm.
  6. Prepare tacos by frying tortillas in a pan, adding shredded beef and cheese, and folding.
  7. Fry until crispy and cheese is melted.
  8. Serve tacos with consomé for dipping, topped with cilantro and lime wedges.

Notes

Soak the chiles well for the best flavor. Add other toppings like diced onions or salsa for more flavor. Use a slow cooker for a convenient method.
