Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 2 tablespoons vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons black pepper
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • Salt to taste
  • Cooked rice for serving

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger, sauté until fragrant.
  3. Add the sliced chicken and cook until browned and cooked through. Remove chicken from the pan and set aside.
  4. In the same pan, add the bell pepper, broccoli, and carrot; stir-fry until just tender.
  5. Return the chicken to the pan.
  6. Add soy sauce, black pepper, and oyster sauce; stir everything together and cook for another 2-3 minutes.
  7. Serve hot over cooked rice.

Notes

For extra crunch, use fresh vegetables like snap peas or baby corn. You can also garnish with sliced green onions or sesame seeds.
