Blueberry French Toast Casserole

Ingredients

  • 1 loaf of bread (challah or brioche)
  • 1 cup blueberries (fresh or frozen)
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing)

Instructions

  1. Grease a baking dish with butter.
  2. Cut the bread into cubes and arrange half of it in the baking dish.
  3. Sprinkle half of the blueberries over the bread.
  4. Add the remaining bread and top with the remaining blueberries.
  5. In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt.
  6. Pour the egg mixture over the bread and blueberries, ensuring all the bread is soaked.
  7. Cover and refrigerate for at least 2 hours or overnight.
  8. Preheat the oven to 350°F (175°C).
  9. Bake uncovered for 45-50 minutes until golden brown.
  10. Serve warm, drizzled with syrup if desired.

Notes

Use stale bread for better texture. For added flavor, mix in lemon zest or nutmeg.
