Blueberry Lemon French Toast Casserole

Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract
  • 2 cups blueberries
  • 2 loaves French bread, cubed
  • 2 cups milk
  • 8 large eggs
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 lemon (zest + 2 tablespoons juice)

Instructions

  1. Prepare the Cream Cheese Mixture: Mix cream cheese, powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth. Fold in blueberries, lemon juice, and lemon zest.
  2. Layer the Bread: In a greased 10×14-inch baking dish, layer half of the cubed French bread, spread the cream cheese mixture over it, and add the remaining cubed bread on top.
  3. Prepare the Egg Mixture: Whisk together 2 cups of milk, eggs, 2 teaspoons of vanilla extract, cinnamon, nutmeg, remaining lemon zest, and 1 tablespoon of lemon juice. Pour the egg mixture over the bread layers and sprinkle with remaining blueberries.
  4. Chill Overnight: Cover and refrigerate overnight to allow flavors to soak through.
  5. Bake the Casserole: Preheat oven to 375°F (190°C). Bake covered with foil for 45 minutes, then remove foil and bake for an additional 30 minutes until golden brown.
  6. Serve and Enjoy: Allow to cool slightly before serving. Dust with powdered sugar or drizzle with maple syrup.
