- 1 cup Greek yogurt
- 1/2 cup blueberries
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional)
Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat. Simmer for 5 minutes until the blueberries soften.
- If using, dissolve cornstarch in water and stir it into the blueberry mixture to thicken. Remove from heat and let it cool completely.
- In a bowl, mix Greek yogurt and vanilla extract until smooth. Adjust sweetness by adding more honey or maple syrup if desired.
- Spoon yogurt into silicone molds or mini muffin tins, filling about three-quarters full.
- Add a spoonful of cooled blueberry compote on top of each yogurt portion. Use a toothpick to swirl gently to create a marbled effect.
- Freeze molds for at least 180 minutes until solid.
- Remove frozen bites from molds and store in an airtight container in the freezer. Let sit for 2-3 minutes before enjoying for best texture.

Store in an airtight container in the freezer for about a month. Let sit at room temperature for a few minutes before eating.
