- 4 Roma tomatoes, diced
- ¼ cup basil leaves, chopped
- 2 garlic cloves, minced
- 1 tablespoon extra virgin olive oil
- 1–2 teaspoons balsamic vinegar
- Salt, to taste
- 8 oz feta cheese, crumbled
- ½ block cream cheese (4 oz), softened
- ½ cup sour cream
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated
- More basil leaves, chopped for garnish
Instructions
- Chop the tomatoes and mix them with basil and minced garlic in a bowl.
- Add olive oil and balsamic vinegar, then season with salt and allow to sit for 10-15 minutes.
- In another bowl, crumble feta and mix with cream cheese and sour cream until smooth.
- Add minced garlic, lemon juice, and olive oil to the cheese mixture, blending well.
- In a serving bowl, layer the cheese mixture first, then top with the tomato mixture.
- Garnish with red pepper flakes, grated Parmesan, and more basil.
Notes
Use fresh ingredients for the best taste. This dip is best enjoyed fresh. Pair it with crackers, toasted baguette slices, or vegetable sticks.
