- 2 cups Shredded Chicken (store-bought or fresh)
- 1/2 cup Buffalo Sauce
- 1 cup Mozzarella Cheese
- 1 cup All-Purpose Flour
- 2 large Eggs
- 1 cup Panko Breadcrumbs
- 2 cups Cooking Oil
- 1/2 cup Dipping Sauces (blue cheese or ranch)
Instructions
- In a bowl, mix the shredded chicken and buffalo sauce until well combined.
- Wrap a spoonful of the chicken mixture around a piece of mozzarella cheese and shape into a stick. Repeat with remaining cheese and chicken.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Dip each chicken-wrapped cheese stick in flour, then in egg, and finally in panko to coat.
- In a large pot, heat the cooking oil over medium-high heat until hot.
- Fry the breaded sticks in the hot oil until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
- Repeat frying until all sticks are cooked.
Notes
For extra flavor, marinate chicken in buffalo sauce for 30 minutes before use. Baked version available by placing on a lined baking sheet and baking at 400°F (200°C) for 15-20 minutes.
