Buffalo Chicken Taquitos

Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 8 small flour tortillas
  • Oil for frying
  • Blue cheese or ranch dressing for dipping

Instructions

  1. In a bowl, mix the shredded chicken and buffalo sauce until well combined.
  2. Stir in the shredded cheese.
  3. Place a few tablespoons of the chicken mixture onto each tortilla and roll them up tightly.
  4. In a frying pan, heat oil over medium heat.
  5. Fry the taquitos until golden and crispy on all sides, about 2-3 minutes per side.
  6. Remove from the pan and drain on paper towels.
  7. Serve hot with blue cheese or ranch dressing for dipping.

Notes

For extra crunch, try baking the taquitos instead of frying them. Brush with oil and bake at 400°F (200°C) for about 15-20 minutes.
