Ingredients

  • 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon sweet paprika
  • ½ teaspoon curry powder
  • 1 tablespoon Greek yogurt
  • 3 tablespoons vegetable oil
  • 3 tablespoons butter (divided)
  • 6 garlic cloves, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 2 cups heavy cream
  • ½ teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon garam masala
  • ½ teaspoon curry powder
  • ¼ cup freshly chopped parsley (optional, for garnish)
  • Naan bread and steamed rice (for serving)

Instructions

  1. In a mixing bowl, combine the chicken pieces with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let it marinate for at least 30 minutes.
  2. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken and cook until browned on all sides, about 7-10 minutes. Remove the chicken and set aside.
  3. In the same skillet, reduce the heat to medium and melt 2 tablespoons of butter. Add minced garlic and diced onion, sautéing until the onion is translucent.
  4. Stir in tomato sauce, sugar, 1 teaspoon salt, and black pepper. Simmer for about 5 minutes.
  5. Pour in heavy cream, stirring to combine. Add cayenne pepper (if using), garam masala, and additional curry powder. Let it simmer for 10 minutes.
  6. Add the cooked chicken back into the sauce with the remaining tablespoon of butter. Stir and simmer for an additional 5 minutes.
  7. Garnish with freshly chopped parsley and serve hot with naan bread and steamed rice.

Notes

Consider substituting chicken breast for thighs or using a non-dairy cream for a lighter version.
