- 1 garlic head

- 30 grams olive oil
- 50 grams butter (softened)

- 90 grams warm milk
- 7 grams active dry yeast
- 25 grams honey
- 200 grams all-purpose flour
- 50 grams bread flour
- 20 grams milk powder (optional)
- 25 grams butter (for the dough)
- 2 egg yolks
- 1 1/2 teaspoon salt
- 1 tablespoon sugar
- 200 grams mozzarella cheese (shredded)
- Garlic butter (made previously)
- 1 egg (for egg wash)
Instructions
- Roast Garlic: Cut off the top of the garlic head. Drizzle with olive oil and sprinkle with salt. Cover with foil and roast at 160°C (320°F) for 2 hours.
- Make Garlic Butter: Mix roasted garlic with 50 grams of butter, chopped parsley, and any reserved garlic oil.
- Prepare Yeast Mixture: Combine warm milk, yeast, and honey. Let sit for 10 minutes until frothy.
- Make Dough: Combine all-purpose flour, bread flour, sugar, milk powder (if using), 25 grams butter, salt, egg yolks, and the yeast mixture. Mix until a dough forms.
- Knead Dough: Knead the dough on a clean surface for 15-20 minutes until smooth and elastic.
- Proof Dough: Place in a bowl, cover, and let it rise in a warm place for 1.5 hours or until doubled in size.
- Roll Out Dough: Roll the dough to about 1/4 cm thickness and spread with garlic butter.
- Add Mozzarella Cheese: Sprinkle shredded mozzarella over the garlic butter.
- Cut Dough: Roll the dough into a log shape and cut into 6 equal portions.
- Second Proof: Let rolls proof on a baking sheet for another 30 minutes.
- Bake: Preheat oven to 175°C (350°F). Brush with egg wash and bake for 20-25 minutes until golden brown.
- Serve: Brush with remaining garlic butter and sprinkle fresh parsley on top before serving.
Notes
Use fresh garlic for the best flavor. Proof the dough properly for fluffy rolls.
