Buttery Cheese Garlic Rolls

Deliciously soft and fluffy rolls infused with roasted garlic and melted mozzarella cheese, perfect for any meal or celebration.

Ingredients

  • 1 garlic head
  • Sprinkle of salt
  • 30 grams olive oil
  • 50 grams butter (softened)
  • 1 tablespoon fresh parsley (chopped)
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for the dough)
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese (shredded)
  • Garlic butter (made previously)
  • 1 egg (for egg wash)

Instructions

  1. Roast Garlic: Cut off the top of the garlic head. Drizzle with olive oil and sprinkle with salt. Cover with foil and roast at 160°C (320°F) for 2 hours.
  2. Make Garlic Butter: Mix roasted garlic with 50 grams of butter, chopped parsley, and any reserved garlic oil.
  3. Prepare Yeast Mixture: Combine warm milk, yeast, and honey. Let sit for 10 minutes until frothy.
  4. Make Dough: Combine all-purpose flour, bread flour, sugar, milk powder (if using), 25 grams butter, salt, egg yolks, and the yeast mixture. Mix until a dough forms.
  5. Knead Dough: Knead the dough on a clean surface for 15-20 minutes until smooth and elastic.
  6. Proof Dough: Place in a bowl, cover, and let it rise in a warm place for 1.5 hours or until doubled in size.
  7. Roll Out Dough: Roll the dough to about 1/4 cm thickness and spread with garlic butter.
  8. Add Mozzarella Cheese: Sprinkle shredded mozzarella over the garlic butter.
  9. Cut Dough: Roll the dough into a log shape and cut into 6 equal portions.
  10. Second Proof: Let rolls proof on a baking sheet for another 30 minutes.
  11. Bake: Preheat oven to 175°C (350°F). Brush with egg wash and bake for 20-25 minutes until golden brown.
  12. Serve: Brush with remaining garlic butter and sprinkle fresh parsley on top before serving.

Notes

Use fresh garlic for the best flavor. Proof the dough properly for fluffy rolls.
