Instructions
- Prepare the Apples: Peel and chop apples. Place in a saucepan, add brown sugar and cinnamon, and cook over medium heat until soft, around 10-15 minutes. Cool.
- Make the Crust: Mix vanilla wafer crumbs with melted butter until combined. Portion crumbs into small plastic cups and press down to form a base.
- Prepare the Pudding: Mix instant pudding and milk in a bowl until combined. Chill for 5 minutes.
- Add the Caramel: Mix the chilled pudding with salted caramel sauce until smooth.
- Whip the Cream: Add heavy cream to the pudding mixture and whip until thick and creamy.
- Pipe the Mousse: Transfer the mousse into a piping bag and fill each cup generously over the crust.
- Top with Apples: Spoon the cooled cinnamon apples over the mousse in each cup.
- Garnish: Drizzle with additional caramel sauce if desired.
- Chill and Serve: Seal the cups and chill before serving for a few hours or overnight.
Notes
For a balanced flavor, choose a mix of sweet and tart apples. If you want a crunchier texture, add some chopped nuts on top. Ensure the pudding mixture is thick before piping it into the cups for the best texture.
