Cheddar Bay Biscuit Seafood Pot Pie

A delicious twist on the classic pot pie featuring a creamy seafood filling topped with fluffy Cheddar Bay biscuits.

Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 12 oz langostino tails or lobster
  • 8 oz jumbo lump crabmeat (cooked)
  • 1 cup onions (chopped)
  • 1/2 cup bell pepper (chopped)
  • 1/4 cup celery (chopped)
  • 1 tsp salt (plus more to taste)
  • 1 tsp pepper (plus more to taste)
  • Olive oil (for cooking)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 tbsp butter
  • 5 tbsp flour
  • 1 tbsp garlic (minced or paste)
  • 1 tsp thyme
  • 1 tsp tarragon (dried)
  • 1/2 tsp smoked paprika
  • 1 box Red Lobster Cheddar Bay biscuit mix (11.36 oz)
  • 3/4 cup milk
  • 1/2 cup mild cheddar cheese (shredded)
  • 1/4 cup butter (melted)
  • 1 pouch garlic herb seasoning (from the box)

Instructions

  1. Heat olive oil in a large pan. Add onions, bell pepper, and celery. Cook until soft. Stir in the shrimp, langostino, and crabmeat. Season with salt and pepper. Cook until the shrimp turn pink. Remove from heat and set aside.
  2. In the same pan, melt butter. Add flour and stir for 1-2 minutes. Gradually whisk in chicken broth and heavy cream. Add garlic, thyme, tarragon, smoked paprika, and more salt and pepper to taste. Stir until thickened, about 5 minutes.
  3. Mix the melted butter with the garlic herb seasoning in a small bowl.
  4. Preheat the oven according to the biscuit package instructions. Pour the seafood mixture into a baking dish. Pour the gravy over the seafood. Prepare the Cheddar Bay biscuits according to the box instructions, adding the milk and shredded cheese. Spoon biscuit dough over the seafood mixture. Brush with herb butter.
  5. Follow the biscuit package instructions to bake until golden brown and the filling is bubbly.

Notes

Use fresh seafood for the best flavor. Adjust the vegetables based on your preference. Avoid overcooking the seafood to maintain tenderness.
