Cheesy Meatball Subs

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 jar marinara sauce
  • 4 hoagie rolls
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet and bake for 20-25 minutes, or until cooked through.
  5. While the meatballs are baking, heat the marinara sauce in a saucepan over medium heat.
  6. Once the meatballs are done, add them to the marinara sauce and stir to coat.
  7. Cut the hoagie rolls open and place them on a baking dish.
  8. Fill each roll with meatballs and sauce, then top with mozzarella cheese.
  9. Bake in the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. You can reheat in the microwave or oven.
