Cheesy Orzo Pasta

A comforting and creamy dish made with tender orzo and melted cheese, perfect for weeknight dinners.

Ingredients

  • 2 cups chicken broth
  • 3 cups water
  • 1 1/2 cups orzo
  • 1 tablespoon butter
  • 1/2 teaspoon kosher salt (more to taste)
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon lemon zest
  • 1 1/2 cups colby jack cheese (grated)

Instructions

  1. Add chicken broth and water to a medium saucepan.
  2. Cover and bring to a boil.
  3. Add orzo and let it simmer, uncovered, for about 8-10 minutes or until cooked al dente.
  4. Reserve 1/2 cup of the pasta water.
  5. Drain the orzo and return it to the pan, but remove it from heat.
  6. Add butter, salt, pepper, lemon zest, and the cheese. Gently stir to combine until the cheese melts.
  7. If the mixture is too thick, add splashes of the reserved pasta water to make it creamier.
  8. Taste and adjust salt, pepper, or lemon zest according to preference.
  9. Serve and enjoy!

Notes

For extra flavor, sauté onions or garlic before adding broth. You can also mix in cooked vegetables for added nutrition.
