- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the shredded mozzarella and grated parmesan cheeses, mixing well.
- In another bowl, whisk together the eggs, adding salt and pepper to taste.
- Roll the cheese mixture into golf ball-sized bites.
- Dip each bite in the egg mixture, allowing any excess to drip off.
- Roll the coated bites in the panko breadcrumbs until fully covered.
- Place the bites onto the prepared baking sheet and bake for 15-20 minutes or until golden brown and crispy.
Notes
Serve with zesty marinara sauce or fresh basil pesto for dipping. Leftovers can be stored in the fridge for up to three days.
