- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 cup panko breadcrumbs
- 2 large eggs
- Salt and pepper to taste
- Fresh parsley (optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the shredded mozzarella and grated parmesan until thoroughly combined.
- In another bowl, whisk the eggs, adding a pinch of salt and pepper.
- Form the cheese mixture into tightly packed balls, roughly the size of golf balls.
- Dip each ball into the egg mixture, making sure they are well-coated, then roll them in the panko breadcrumbs until fully covered.
- Place the coated bites on the prepared baking sheet and bake for 15-20 minutes, or until they are golden brown and crispy.
Notes
Serve with marinara sauce for dipping or fresh herbs for garnish. Store any leftovers in an airtight container for up to three days.
