- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 4 slices of cheese (cheddar or your choice)
- 4 slices of bread
- 1 tablespoon mayonnaise
- Salt and pepper to taste
- Butter for grilling
Instructions
- In a bowl, mix the shredded chicken with the mashed avocado, mayonnaise, salt, and pepper.
- Heat a skillet over medium heat and butter one side of each slice of bread.
- On the unbuttered side, spread the chicken and avocado mixture and top with cheese.
- Place another slice of bread on top, buttered side out.
- Grill the sandwich until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
- Slice and serve warm.
Notes
Use day-old bread for a crispier sandwich. Experiment with different cheeses and add greens like spinach for extra nutrients.
