Chicken Avocado Melt Sandwich

A delicious sandwich combining tender chicken, creamy avocado, and melted cheese, grilled to perfection.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 4 slices of cheese (cheddar or your choice)
  • 4 slices of bread
  • 1 tablespoon mayonnaise
  • Salt and pepper to taste
  • Butter for grilling

Instructions

  1. In a bowl, mix the shredded chicken with the mashed avocado, mayonnaise, salt, and pepper.
  2. Heat a skillet over medium heat and butter one side of each slice of bread.
  3. On the unbuttered side, spread the chicken and avocado mixture and top with cheese.
  4. Place another slice of bread on top, buttered side out.
  5. Grill the sandwich until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
  6. Slice and serve warm.

Notes

Use day-old bread for a crispier sandwich. Experiment with different cheeses and add greens like spinach for extra nutrients.
