Ingredients
Scale
- 2 tbsp olive oil
- 1 1/2 lb Springer Mountain Farms chicken breast
- 1 1/2 tsp paprika
- 1 1/2 tsp oregano
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 12 oz gluten-free farfalle pasta
- 4 tbsp butter
- 2 tsp dry shallots
- 2 tsp Italian seasoning
- 1/2 cup chicken broth
- 2 tbsp Gluten Free 1:1 Flour
- 3 cups heavy cream
- 12 oz shredded parmesan
- 1/4 cup pasta water
- 1/2 tsp salt
- 1 tsp garlic powder
Instructions
- In a large pot, boil pasta according to the package’s instructions until al dente.
- Mix all chicken seasonings in a small bowl: paprika, oregano, garlic powder, thyme, salt, and pepper.
- Pound the chicken slightly to thin it out, then season both sides with the spice mix.
- Heat olive oil in a large skillet over medium heat.
- Once hot, sear the chicken for about 5 minutes on each side.
- After searing, lower the heat to medium-low, cover the pan, and cook for an additional 10-12 minutes until the internal temperature reaches 165°F. Remove the chicken and set it aside on a cutting board.
- In the same pan, melt the butter.
- When the butter is melted, add the seasonings (shallots, garlic powder, and Italian seasoning) and simmer for one minute.
- Stir in the flour, scraping the bottom of the pan.
- Pour in the chicken broth and heavy cream, whisking until you have a smooth sauce.
- Add the Parmesan cheese and stir until melted. Cook until your desired sauce thickness is reached.
- Toss in the cooked pasta, coating it well with the sauce. Add pasta water, one tablespoon at a time, to thin as needed.
- Slice the cooked chicken and add it to the pasta. Stir gently to combine and serve!
Notes
Serve with fresh parsley, additional Parmesan, or cracked pepper. Pairs well with a side salad or crusty bread. Leftovers can be stored in an airtight container for 3-4 days.
