Ingredients

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Gather all your ingredients and chop the vegetables into bite-sized pieces.
  2. Cook the lo mein noodles according to package instructions until they are al dente. Drain them and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add some oil and sauté the chicken until it is golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet.
  4. In the same pan, stir-fry the bell peppers, carrots, and green onions until they are tender yet crisp, about 3-4 minutes.
  5. Return the cooked chicken to the skillet with the vegetables. Add the lo mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices you like. Toss everything together until well mixed.
  6. Serve hot with extra soy sauce if desired.

Notes

Best served hot. Garnish with extra green onions or sesame seeds. Pairs well with steamed dumplings or spring rolls.
