Chicken Lo Mein

A quick and delicious stir-fry dish that brings comfort food to the table with tender chicken, vibrant vegetables, and saucy noodles.

  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh garlic, minced

Instructions

  1. Prep Your Ingredients: Start by chopping the vegetables into bite-sized pieces and setting everything within reach.
  2. Cook the Lo Mein Noodles: Follow the package instructions to prepare the noodles until they are al dente. Drain and set them aside.
  3. Sauté the Chicken: Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken pieces until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set it aside.
  4. Stir-Fry the Vegetables: In the same skillet, toss in the sliced bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until they are tender but still crisp.
  5. Combine Everything: Return the cooked chicken to the skillet. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
  6. Serve and Enjoy: Dish up your Chicken Lo Mein while it’s hot, with a drizzle of extra soy sauce if you’d like.

Notes

For a vegetarian option, substitute chicken for tofu and use seasonal vegetables. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 1-2 months.
