- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 carrots, thinly sliced
- 2 green onions, chopped
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh garlic, minced
Instructions
- Prep Your Ingredients: Start by chopping the vegetables into bite-sized pieces and setting everything within reach.
- Cook the Lo Mein Noodles: Follow the package instructions to prepare the noodles until they are al dente. Drain and set them aside.
- Sauté the Chicken: Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken pieces until golden brown and cooked through, about 6-8 minutes. Remove the chicken and set it aside.
- Stir-Fry the Vegetables: In the same skillet, toss in the sliced bell peppers, carrots, and green onions. Stir-fry for about 3-4 minutes until they are tender but still crisp.
- Combine Everything: Return the cooked chicken to the skillet. Add the lo mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well mixed and heated through.
- Serve and Enjoy: Dish up your Chicken Lo Mein while it’s hot, with a drizzle of extra soy sauce if you’d like.
Notes
For a vegetarian option, substitute chicken for tofu and use seasonal vegetables. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 1-2 months.
