Chicken Parmesan Casserole

A delicious twist on the classic Chicken Parmesan, this casserole combines tender chicken, rich marinara sauce, and gooey cheese over pasta, making it perfect for family dinners.

Ingredients

  • 4 cups cooked chicken, shredded (preferably rotisserie)
  • 2 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups cooked pasta (e.g., penne or rotini)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • salt, to taste
  • pepper, to taste
  • For garnish: fresh basil or parsley (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the shredded chicken, garlic powder, Italian seasoning, salt, and pepper. Stir to combine and heat for about 5 minutes until warmed through.
  3. In a mixing bowl, combine the cooked pasta, marinara sauce, half of the Parmesan cheese, and half of the mozzarella cheese. Mix well.
  4. Add the seasoned chicken to the pasta mixture and mix until everything is evenly distributed.
  5. Pour the casserole mixture into a greased 9-inch by 13-inch baking dish and spread it evenly.
  6. Top the casserole with the remaining mozzarella and Parmesan cheese.
  7. Cover the dish with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.
  9. Let cool for a few minutes before garnishing with fresh basil or parsley if desired.
  10. Serve warm and enjoy!

Notes

For a creamier texture, add a splash of heavy cream or cream cheese to the marinara sauce. You can also add vegetables for extra nutrition, and use gluten-free pasta for a gluten-free version.
