Chicken Shawarma with Creamy Garlic Sauce

  • 2 lbs boneless, skinless chicken thighs
  • 1/4 cup plain yogurt
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 4 cloves, minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon turmeric
  • Salt and pepper, to taste
  • Pita bread or flatbread, for serving
  • Sliced cucumbers, tomatoes, and red onion, for serving
  • Chopped fresh parsley, for garnish
  • 1 cup mayonnaise (for garlic sauce)
  • 2 tablespoons lemon juice (for garlic sauce)
  • 4 cloves, minced garlic (for garlic sauce)
  • Salt and pepper, to taste (for garlic sauce)

Instructions

  1. In a large bowl, combine yogurt, olive oil, lemon juice, minced garlic, ground cumin, ground coriander, smoked paprika, allspice, turmeric, salt, and pepper. Mix well to create a marinade.
  2. Add chicken thighs to the marinade, ensuring they’re well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your grill or oven to medium-high heat (400°F or 200°C if using the oven).
  4. Grill the marinated chicken thighs for about 5-7 minutes on each side, until golden brown and cooked through. If using the oven, place chicken on a baking sheet and bake for 20-25 minutes, turning halfway.
  5. While the chicken is cooking, prepare the creamy garlic sauce by combining mayonnaise, lemon juice, minced garlic, salt, and pepper in a small bowl. Mix until smooth and refrigerate.
  6. Once cooked, slice the chicken thinly.
  7. Serve the chicken on warmed pita or flatbread topped with cucumbers, tomatoes, red onion, and a drizzle of creamy garlic sauce, garnished with chopped fresh parsley.

Notes

For best flavor, let the chicken marinate overnight. Adjust spices to taste.
