- 2 chicken breasts, grilled and sliced
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup bell peppers, diced
- 1 cup corn (fresh or frozen)
- 1 avocado, sliced
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
Instructions
- Season the grilled chicken with salt, pepper, and any smoky spices you prefer.
- In a bowl, combine the cooked rice, black beans, bell peppers, and corn.
- Lay a tortilla flat and add a portion of the rice and bean mixture in the center.
- Top with sliced grilled chicken, avocado, and drizzle with chipotle ranch dressing.
- Fold in the sides of the tortilla and roll it up from the bottom to enclose the filling.
- Repeat with the remaining tortillas and fillings.
- Serve immediately, or you can grill the burritos for a crispier texture.
Notes
Serve with extra chipotle ranch dressing for dipping. Great with tortilla chips or salad.
