Chipotle Ranch Grilled Chicken Burrito

Ingredients

  • 2 chicken breasts, grilled and sliced
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup bell peppers, diced
  • 1 cup corn (fresh or frozen)
  • 1 avocado, sliced
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. Season the grilled chicken with salt, pepper, and any smoky spices you prefer.
  2. In a bowl, combine the cooked rice, black beans, bell peppers, and corn.
  3. Lay a tortilla flat and add a portion of the rice and bean mixture in the center.
  4. Top with sliced grilled chicken, avocado, and drizzle with chipotle ranch dressing.
  5. Fold in the sides of the tortilla and roll it up from the bottom to enclose the filling.
  6. Repeat with the remaining tortillas and fillings.
  7. Serve immediately, or you can grill the burritos for a crispier texture.

Notes

Serve with extra chipotle ranch dressing for dipping. Great with tortilla chips or salad.
