- 2 boneless, skinless chicken breasts
- 1 tablespoon chipotle seasoning
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup corn
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the grill to medium-high heat.
- Season chicken breasts with chipotle seasoning, salt, and pepper.
- Grill chicken for about 5-7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
- In each tortilla, layer rice, black beans, grilled chicken, tomatoes, lettuce, corn, and drizzle with chipotle ranch dressing.
- Roll the tortillas tightly to form burritos, tucking in the ends.
- Serve warm, optionally with additional dressing on the side.
Notes
For extra flavor, consider adding cheese, avocado, or jalapeños. Warm the tortillas slightly before filling them.
