Chipotle Ranch Grilled Chicken Burrito

A delicious and customizable burrito filled with grilled chicken and zesty chipotle ranch dressing.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon chipotle seasoning
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup corn
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season chicken breasts with chipotle seasoning, salt, and pepper.
  3. Grill chicken for about 5-7 minutes on each side until fully cooked. Let it rest for a few minutes before slicing.
  4. In each tortilla, layer rice, black beans, grilled chicken, tomatoes, lettuce, corn, and drizzle with chipotle ranch dressing.
  5. Roll the tortillas tightly to form burritos, tucking in the ends.
  6. Serve warm, optionally with additional dressing on the side.

Notes

For extra flavor, consider adding cheese, avocado, or jalapeños. Warm the tortillas slightly before filling them.
