- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well combined.
- Allow the batter to sit for 5 minutes to let the oats absorb some moisture.
- Scoop the mixture evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes or until the bites are set and lightly golden on top.
- Let the bites cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
These bites can be enjoyed warm or cold. Consider adding nuts or fresh fruit for extra flavor. They can be stored in the fridge for up to 4 days or frozen for up to 2 months.
