Cinnamon Roll Protein Bites

Ingredients

  • 1/2 cup Rolled Oats, blended into powder (50g)
  • 1 cup Almond Flour (96g)
  • 2 tbsp Ground Flaxseed (14g)
  • 1/4 cup Vanilla Protein Powder (30g)
  • 1/4 cup Almond Butter (60g)
  • 2 tbsp Maple Syrup (30ml)
  • 1 tsp Cinnamon (5g)
  • 1/4 tsp Nutmeg (1g)
  • 1/4 cup Unsweetened Almond Milk (60ml)
  • 2 tbsp Powdered Sugar (16g)
  • 1 tbsp Cinnamon (5g)
  • 2 tbsp Cream Cheese or Dairy-free Alternative (30g)
  • 3 tbsp Powdered Sugar (24g)
  • 12 tsp Unsweetened Almond Milk (5-10ml)

Instructions

  1. Blend the rolled oats into a fine powder. In a large bowl, combine the powdered oats, almond flour, ground flaxseed, protein powder, cinnamon, and nutmeg. Mix well.
  2. Add almond butter and maple syrup to the dry ingredients. Stir until crumbly.
  3. Gradually add almond milk, 1 tablespoon at a time, mixing until a sticky but firm dough forms. Adjust with more almond flour or milk as needed.
  4. Roll the dough into 1-inch balls. Mix powdered sugar and cinnamon for the coating. Roll each bite in the cinnamon-sugar mixture.
  5. Place the coated bites on parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Whisk together cream cheese, powdered sugar, and almond milk (start with 1 teaspoon, adding more for desired consistency) until smooth.
  7. Drizzle the glaze over the chilled bites. Serve immediately or store in the fridge.

Notes

Store in an airtight container in the refrigerator for up to one week. Can be frozen for up to three months.
