Cinnamon Roll Protein Bites

Ingredients

  • 1/2 cup Rolled Oats, blended into powder (50g)
  • 1 cup Almond Flour (96g)
  • 2 tbsp Ground Flaxseed (14g)
  • 1/4 cup Vanilla Protein Powder (30g)
  • 1/4 cup Almond Butter (60g)
  • 2 tbsp Maple Syrup (30ml)
  • 1 tsp Cinnamon (5g)
  • 1/4 tsp Nutmeg (1g)
  • 1/4 cup Unsweetened Almond Milk (60ml)
  • 2 tbsp Powdered Sugar (16g)
  • 1 tbsp Cinnamon (5g)
  • 2 tbsp Cream Cheese or Dairy-free Alternative (30g)
  • 3 tbsp Powdered Sugar (24g)
  • 12 tsp Unsweetened Almond Milk (5-10ml)

Instructions

  1. Blend the rolled oats into a fine powder. In a large bowl, mix the powdered oats, almond flour, ground flaxseed, protein powder, cinnamon, and nutmeg well.
  2. Add the almond butter and maple syrup to the dry ingredients. Stir until the mixture is crumbly.
  3. Gradually add almond milk, one tablespoon at a time. Mix until a sticky but firm dough forms. You can add more almond flour or milk if needed.
  4. Roll the dough into 1-inch balls. In a separate bowl, mix powdered sugar and cinnamon for coating. Roll each ball in the cinnamon-sugar mixture.
  5. Place the coated bites on parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Whisk together the cream cheese, powdered sugar, and almond milk (start with 1 teaspoon and add more for the desired consistency) until smooth.
  7. Drizzle the glaze over the chilled bites. Serve immediately or store them in the fridge.

Notes

Store in an airtight container in the fridge for about a week, or freeze for up to three months. For a different flavor, consider adding chocolate chips or chopped nuts.
