Classic Chicken Pot Pie Pasta

A comforting dish combining the flavors of traditional chicken pot pie with pasta, perfect for busy weeknights.

  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 8 oz pasta (penne or rotini)
  • 1 cup cooked chicken, shredded
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the shredded chicken and frozen vegetables, cooking until the vegetables are heated through.
  4. Stir in the cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Add the cooked pasta and stir to combine.
  6. Sprinkle cheddar cheese on top and cook until the cheese is melted.
  7. Garnish with fresh parsley and serve warm.

Notes

Use rotisserie chicken for a quicker option. Customize the vegetables based on your preference. For a thicker sauce, let it simmer longer before adding pasta.
