- 8 oz pasta (fusilli or penne)
- 2 tablespoons butter
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cups cooked chicken, shredded
- 1 cup frozen peas
- 3 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (optional)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the onion, carrots, and celery; sauté until softened, about 5-7 minutes.
- Stir in the cooked chicken, peas, thyme, salt, and pepper.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and let it thicken slightly.
- Add the cooked pasta to the skillet and toss until everything is well combined and heated through.
- Garnish with fresh parsley if desired and serve warm.
Notes
Pairs well with a side salad or crusty bread. Best enjoyed fresh.
