Ingredients

  • 8 oz pasta (fusilli or penne)
  • 2 tablespoons butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cups cooked chicken, shredded
  • 1 cup frozen peas
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, melt the butter over medium heat.
  3. Add the onion, carrots, and celery; sauté until softened, about 5-7 minutes.
  4. Stir in the cooked chicken, peas, thyme, salt, and pepper.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in the heavy cream and let it thicken slightly.
  7. Add the cooked pasta to the skillet and toss until everything is well combined and heated through.
  8. Garnish with fresh parsley if desired and serve warm.
