Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons Worcestershire sauce
- 1 bay leaf
Instructions
- In a large crockpot, combine beef, carrots, potatoes, onion, and garlic.
- Pour the beef broth over the mixture and add thyme, rosemary, salt, pepper, Worcestershire sauce, and bay leaf.
- Stir to combine.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours until beef and vegetables are tender.
- Remove bay leaf before serving. Enjoy your hearty stew!
Notes
For added flavor, brown the beef beforehand. Fresh herbs can be used instead of dried. Additional vegetables can also be included for extra nutrition.
