Cottage Cheese Chicken Parmesan Bowl

  • 2 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. In a skillet over medium heat, cook the chicken for 6-7 minutes on each side, until it’s cooked thoroughly and reaches an internal temperature of 165°F (74°C).
  4. In a bowl, mix the cottage cheese and half of the marinara sauce.
  5. Once the chicken is cooked, place it in a baking dish. Spread the cottage cheese mixture over the chicken, then pour the remaining marinara sauce on top.
  6. Sprinkle the mozzarella cheese evenly over the chicken.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired before serving.

Notes

To enhance the flavor, let the chicken marinade in Italian seasoning for a few hours if you have time. You can add vegetables like spinach or bell peppers into the marinara sauce for added nutrients and flavor. Use low-fat cottage cheese for a lighter version of the dish.
