- 2 boneless, skinless chicken breasts
- 1 cup cottage cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- In a skillet over medium heat, cook the chicken for 6-7 minutes on each side, until it’s cooked thoroughly and reaches an internal temperature of 165°F (74°C).
- In a bowl, mix the cottage cheese and half of the marinara sauce.
- Once the chicken is cooked, place it in a baking dish. Spread the cottage cheese mixture over the chicken, then pour the remaining marinara sauce on top.
- Sprinkle the mozzarella cheese evenly over the chicken.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired before serving.
Notes
To enhance the flavor, let the chicken marinade in Italian seasoning for a few hours if you have time. You can add vegetables like spinach or bell peppers into the marinara sauce for added nutrients and flavor. Use low-fat cottage cheese for a lighter version of the dish.
