Cottage Cheese and Spinach Crustless Quiche

A healthy and delicious crustless quiche packed with protein and nutrients. Perfect for any meal of the day and customizable with leftover veggies.

Ingredients

  • 1 cup cottage cheese
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1 cup shredded cheddar cheese (divided)
  • 1 small onion (finely chopped)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. Sauté the chopped onion in a pan over medium heat until softened, about 5 minutes.
  3. In a large bowl, combine the cottage cheese, sautéed onion, spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix well.
  4. Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.
  5. Bake for 30-35 minutes until the quiche is set and golden brown on top. Let cool slightly before slicing.

Notes

Leftover quiche can be stored in an airtight container in the refrigerator for up to three days. To reheat, warm in the oven or microwave. Can also be frozen for up to two months.
