- 4 (½ pound) beef cube steaks
- 2 ¼ cups all-purpose flour, divided
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon black pepper
- ¾ teaspoon salt
- 1 ½ cups buttermilk
- 1 tablespoon hot pepper sauce (e.g., Tabasco™)
- 1 large egg
- 2 cloves garlic, minced
- 3 cups vegetable shortening for frying
- 4 cups milk
- Kosher salt and ground black pepper to taste
Instructions
- Pound the beef cube steaks to approximately ¼ inch thickness if necessary.
- In a bowl, mix 2 cups flour, baking powder, baking soda, black pepper, and salt.
- In a separate bowl, whisk together buttermilk, hot pepper sauce, egg, and minced garlic.
- Coat each steak in the flour mixture, then dip in the buttermilk batter, and return to flour mixture for an additional coating.
- Melt shortening in a skillet over medium-high heat until it reaches 350°F.
- Fry the steaks for about 3 minutes on each side or until golden brown.
- Transfer cooked steaks to drain excess oil on a wire rack or paper towel.
- For gravy, combine remaining flour in the skillet with drippings, whisk in milk, and stir until thickened. Season to taste.
Notes
For extra crunch, consider double-dipping the steaks in flour. Store leftovers in an airtight container for up to 3 days.
