- 1 cup flour
- 1/2 cup rolled oats
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup dried cranberries
- 1/2 cup white chocolate chips
- 1/4 cup cream cheese frosting (for topping)
- Additional white chocolate for drizzling (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix together flour, oats, baking soda, and salt.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Fold in dried cranberries and white chocolate chips.
- Spread the batter evenly in the prepared pan.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let the bars cool completely in the pan.
- Once cooled, spread cream cheese frosting on top and drizzle with additional melted white chocolate if desired.
- Cut into squares and serve.
Notes
Make sure the butter is softened for easier mixing and do not overmix the batter to keep the bars soft and chewy.
