- 1 lb Ground Beef
- 1/2 Onion (chopped)
- 1 package Taco Seasoning
- 6 Large Flour Tortillas
- 1 can Refried Beans
- 2–3 cups Shredded Taco Cheese or Cheddar Cheese
- 1 can Cream of Mushroom Soup
- 4 ounces Sour Cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess grease.
- Stir in the taco seasoning and cook according to the package instructions.
- In a large bowl, mix the refried beans, cream of mushroom soup, and sour cream until well combined.
- Take a 9×13 inch baking dish and spread a thin layer of the bean mixture on the bottom.
- Layer three tortillas over the mixture, then add half of the ground beef, and sprinkle with 1 cup of cheese.
- Spread another layer of the bean mixture on top, followed by the remaining tortillas, ground beef, and cheese.
- Finish with the remaining bean mixture and cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For extra flavor, consider adding black beans, corn, or bell peppers. You can substitute ground beef with ground turkey or chicken for a lighter option. Feel free to use any type of cheese you prefer.
