Creamy Cajun Chicken and Rice Bowls

A delightful dish that combines bold flavors with comfort, perfect for busy weeknight dinners or cozy weekend meals.

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts with Cajun seasoning and salt and pepper.
  2. Cook the chicken in a skillet over medium heat until cooked through, about 6-7 minutes per side. Remove and let rest before slicing.
  3. In the same skillet, add the chicken broth and rice. Bring to a boil, then reduce to simmer, cover, and cook for about 15-20 minutes until the rice is tender.
  4. In a separate saucepan, heat the heavy cream and stir in the Parmesan cheese until melted and smooth.
  5. Layer the cooked rice in bowls, top with sliced chicken, and drizzle with the Parmesan sauce.
  6. Garnish with chopped parsley and serve hot.

Notes

For extra flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. Customize with vegetables like bell peppers or spinach if desired.
