Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Season the chicken breasts with Cajun seasoning and salt and pepper.
- Cook the chicken in a skillet over medium heat until cooked through, about 6-7 minutes per side. Remove and let rest before slicing.
- In the same skillet, add the chicken broth and rice. Bring to a boil, then reduce to simmer, cover, and cook for about 15-20 minutes until the rice is tender.
- In a separate saucepan, heat the heavy cream and stir in the Parmesan cheese until melted and smooth.
- Layer the cooked rice in bowls, top with sliced chicken, and drizzle with the Parmesan sauce.
- Garnish with chopped parsley and serve hot.
Notes
For extra flavor, marinate the chicken in Cajun seasoning for a few hours before cooking. Customize with vegetables like bell peppers or spinach if desired.
