Creamy Cheesy Ground Beef Taco Soup

Ingredients

  • 1 lb ground beef
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans (drained and rinsed)
  • 1 (15 oz) can corn kernels (drained)
  • 2 cups beef broth
  • 1 cup heavy cream
  • 8 oz cream cheese (softened and cubed)
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper (to taste)
  • Optional toppings: sour cream, cilantro, sliced jalapeños, tortilla chips

Instructions

  1. Heat oil in a large pot over medium heat and add ground beef, cooking until browned (5-7 minutes).
  2. Drain excess fat, then add chopped onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add taco seasoning and mix well.
  5. Pour in diced tomatoes, black beans, corn, and beef broth. Stir to combine.
  6. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  7. Stir in heavy cream and cream cheese until melted.
  8. Add shredded cheddar cheese and stir until fully combined.
  9. Season with salt and pepper to taste.
  10. Serve hot with your choice of toppings.

Notes

For extra flavor, consider a mix of ground beef with ground pork or turkey. Adjust the spice level with diced tomatoes.
