- 2 chicken breasts, sliced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Cooked rice, mashed potatoes, or pasta (for serving)
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced chicken breast and cook until golden brown and cooked through.
- Add minced garlic and sliced mushrooms, sautéing until mushrooms are soft.
- Stir in the fresh spinach and cook until wilted.
- Pour in heavy cream and sprinkle in Parmesan cheese, stirring until the sauce thickens.
- Season with salt and pepper to taste.
- Serve over rice, mashed potatoes, or pasta.
Notes
Add extra Parmesan cheese or fresh herbs for garnish. Be careful not to overcook the chicken.
