Ingredients

  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice, mashed potatoes, or pasta (for serving)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced chicken breast and cook until golden brown and cooked through.
  3. Add minced garlic and sliced mushrooms, sautéing until mushrooms are soft.
  4. Stir in the fresh spinach and cook until wilted.
  5. Pour in heavy cream and sprinkle in Parmesan cheese, stirring until the sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve over rice, mashed potatoes, or pasta.

Notes

Add extra Parmesan cheese or fresh herbs for garnish. Be careful not to overcook the chicken.
