Instructions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the diced chicken breast over medium heat until no longer pink.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the vegetable or chicken broth and bring to a simmer.
- Stir in the Greek yogurt and Parmesan cheese until well combined.
- Add the cooked pasta to the skillet and mix until the pasta is coated.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley.
Notes
Make sure not to overcook the chicken; it should be juicy and tender. Feel free to add vegetables like spinach or broccoli for added nutrients and flavor.
