- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the whole wheat pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add minced garlic to the skillet and sauté for another minute.
- Lower the heat and stir in the Greek yogurt and Parmesan cheese, mixing until creamy.
- Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to taste.
- Serve warm, garnished with chopped parsley.
Notes
Make sure not to overcook the chicken; it should be juicy and tender. You can add vegetables like spinach or broccoli for extra nutrition and color. Stir the dish well when adding the pasta to ensure it is evenly coated in the sauce.
